Don't worry, I know its not Wednesday! :) This week has kind of gotten away from me but I still wanted to share a delicious cookie recipe I found. Natalie and I made these yesterday for my hubby's birthday. They are so easy and delicious!
These cookies are soft and due to my personal preferences, a little under baked. :) They are also a perfect mixture of peanut butter and chocolate. A big hit in our house!!
Reece's Pieces Peanut Butter Cookies

Ingredients:
1 large egg
1 cup brown sugar, packed
3/4 cup creamy peanut butter (only use regular - not natural - peanut butter)
1/2 cup of butter (I prefer to use salted and not add extra salt)
1 tbsp. vanilla
1 3/4 cup flour
3/4 tsp baking soda
1 cup mini Reece's pieces
1 cup mini chocolate chips
Directions:
In a stand mixer, combine egg, brown sugar, peanut butter, butter and vanilla until creamy.
In a separate bowl, combine flour and baking soda. Slowly add to egg, sugar and butter mixture.
Add Reece's pieces and chocolate chips. I prefer to hand mix at this point to ensure the chips stay intact.
Refrigerate dough for 1 to 2 hours prior to baking. This helps keep the cookies from spreading during cooking.
Preheat oven to 350 degrees. I use my small cookie scoop and place about 12 to 15 cookies per sheet. Bake for about 7 mins. Centers will look a little gooey but the cookie will firm up as it sits.
